Make Your Own Wine

This is something only true wine lovers would want to do, but what could be better than producing your own quality vino. If in your travels you find yourself in rural Howard County, Maryland, don’t skip Tin Lizzie’s Wineworks located in Clarksville. It’s an unusual winery because you won’t find a tasting room and you can’t buy wine at the facility, which is almost unheard of, but what you can do is make your own wine.

Customers are lead through a step by step process. There are four planned sessions over the course of ten months. Each session is about an hour and a half. The first session is crush and ferment. Seven to ten days later, it’s time to press and transfer the wine into barrels. Four months later in the third session you will rack the wine and taste it, and in the last session, which is approximately ten months later you will bottle and label your wine.

When you go through their process, you are really making the wine yourself. You pick the grapes, the quality, the source of the grapes, the type of oak and the amount of wine you wish to make. Individuals or groups can make a full barrel, half barrel or quarter barrel. What a great way to really get into the wine making process, and then enjoy the fruits of your labor. Wine Cruises – Bon Voyage!

Food & Wine Trails, based in Santa Rosa, California, has announced that it is planning 14 different wine cruises for 2010. These cruises, which will be voyages in the Mediterranean and to Australia and New Zealand, will take place on three luxury liners: Celebrity, Regent and Oceania.

Because of the popularity of wine ever increasing among consumers, the wine cruises are a perfect companion for travelers who are wine connoisseurs and would like to experience a luxury vacation while sampling some of the finest wines in the world. The cruises, which will each have a different winery or wineries as a sponsor, will include 300 to 400 bottles from those wineries for the guests to try and enjoy.

Wine Storage and Temperatures

Wine should always be stored in a cool, dry place. You have heard this before, but temperature is really the most important factor when storing wine. The temperature you store wine in should range from 60 to 70 degrees, it should be consistent, and wine should never be exposed to sunlight. Sunlight can induce premature aging in clear bottles, and ultraviolet light can also penetrate and ruin dark bottles of wine as well. Wine can improve with age, but if it is exposed to sunlight it deteriorates and can change to vinegar.

The natural elements of wine, because it is perishable, are always vulnerable to the environment in which it is stored, but you can limit issues if the environment is controlled; temperature, light, odors. A slow change of temperature is not a problem but a rapid increase is, and the damage it can cause may be noticeable in the cork. If wine expands and contracts in the bottle due to temperature fluctuations, it can damage the integrity of the cork; split, crack, dry, crumble. Wines kept in warm temperatures will age faster than wines kept at cooler temperatures, and all of these factors can negatively impact the taste and aroma of your wine.

Here’s another point that some wine drinkers may neglect. Wine should always be stored on its side to keep the cork moist and wet, especially if you are going to store it for longer than a month. The wine should touch the cork so it can expand and keep air out. Corks can dry out if the bottle is stored upright, and a cork-like aroma can overcome the wine. Even worst, it can allow air into the wine and cause further fermentation which can again turn the wine into vinegar.

When in doubt about temperature, err on the cooler side.
